When you feel here warmth in your hands wrapped around your cup and her soft loving aroma rises towards your nose, earthy and warm, carrying the memory of rainforest soil and ancient traditions. It is a ritual that invites us to slow down, to listen inwardly, and to reconnect with our hearts. But behind this sacred moment lies an important truth that many people rarely consider.

 

If cacao is not clean, it cannot truly be ceremonial.

When cacao is minimally processed and not roasted or at very low tempartures, the purity of these special beans matters more than ever! The quality of the soil, the care of the farmers, and the integrity of the supply chain, it all becomes part of the cup we drink.

Today I want to share something many cacao companies rarely talk about openly. The actual lab testing behind the cacao we drink.


Why Raw Cacao Requires Exceptional Purity

Unlike most commercial chocolate, ceremonial cacao is often or should be in my opinion be minimally processed. It is typically not aggressively roasted, which means the natural compounds of the cacao bean remain largely intact.

This is part of what makes ceremonial cacao so special. The rich flavonoids, minerals, and aromatic compounds are preserved in a way that supports both nourishment and ritual.

However, this also means something important. Raw cacao must start with extremely clean beans.

If cacao beans contain contamination from pesticides, mold, or heavy metals, roasting is often used in industrial chocolate production to mask or reduce microbial issues. This was absolutely shocking to me when I found out! 

This is why I decided to work with Ceremonial cacao, which takes a different path. Ceremonial cacao relies on careful farming practices in high biodiverse land, responsible fermentation, and respectful handling of the beans. Each batch is carefully hand-sorted

In other words, purity begins long before the cacao reaches your cup.

What Our Independent Lab Tests Reveal

To ensure the integrity of our cacao, we send samples to independent laboratories for detailed analysis. The results from our ceremonial cacao from both Beleze and Guatemala revealed several reassuring findings.

No Pesticides

Extensive multi method laboratory testing found no detectable pesticide residues in the cacao sample.

This is significant because cacao is often grown in regions where chemical agriculture can be common. When cacao is cultivated within organic agroforestry systems, surrounded by diverse rainforest plants and healthy soil ecosystems, the need for chemical inputs is naturally reduced.

Working with responsible growers helps protect both the land and the integrity of the cacao itself. It is a beautiful example of how organic agroforestry and biodiverse landscapes can support both environmental health and exceptional cacao purity.

No Heavy Metals 

The analysis measured extremely low levels of heavy metals including lead, arsenic, and mercury, all below the laboratory's quantification limits.

In practical terms, this means the levels were so low they were barely measurable by the laboratory equipment.

Heavy metals occur naturally in many soils around the world, so responsible sourcing and testing are essential for maintaining safe levels in cacao products.

In recent years there has been growing media attention around heavy metals in chocolate. Much of this conversation focuses on large scale commodity cacao used in industrial chocolate production. Ceremonial cacao, particularly when sourced from smallholder agroforestry systems and carefully selected for quality, often shows a very different picture.

Our cacao s grown within biodiverse rainforest ecosystems and handled with great care throughout fermentation and drying. The independent testing results reflect this level of quality and attention.

Microbial safety confirmed

This independent testing also confirmed the absence of Salmonella and very low microbial counts for yeast, molds, and bacteria. Indicating yet again that our cacao was handled with much care during harvesting, fermentation, drying, and transport.


High Nutritional Value

Beyond purity and safety, the independent analysis also highlights something cacao lovers have long experienced. High quality ceremonial cacao is incredibly nourishing!

The nutritional profile of our Maya Mountain Belize cacao reveals a powerful balance of healthy fats, fiber, and essential minerals that support both body and mind, making ceremonial cacao a deeply satisfying whole food rather than simply a flavour ingredient.

Cacao is also naturally rich in important minerals that many modern diets lack. Our analysis identified high levels of magnesium, iron, and zinc, these are vital mineral are known to support energy production, nervous system balance, and cognitive wellbeing.

Magnesium in particular is one of cacao’s most celebrated minerals. It plays a role in hundreds of biochemical processes in the body, including muscle relaxation, nervous system regulation, and mood balance. This is one of the reasons many people feel both grounded and uplifted after enjoying ceremonial cacao.

What makes ceremonial cacao uniquely powerful is how minimally it is processed. Unlike many commercial chocolate products, ceremonial cacao is not heavily alkalized, (actually not at all!) diluted with sugar, or stripped of its natural compounds. When cacao beans are fermented with care and after only grounded into a paste, much of their original nutrient complexity remains intact.

This is one of the key differences between fine ceremonial cacao and commodity cacao used in industrial chocolate production. Commodity cacao is often blended, highly processed, and combined with large amounts of sugar and dairy. While these products may taste sweet and familiar, much of the original nutritional richness of the cacao bean is reduced.

Ceremonial cacao, by contrast, remains much closer to the whole food that grows on the cacao tree.
